Jasmine rice cake with mushroom- leek ragout and quince chutney
Salad:
French Green lentils Marble and cocos bean with sherry vinaigrette
Pasta:
Butternut and smoked tempeh tri- color cappellacci pasta with asparagus and topped with an oregonzola- hazelnut sauce
Trou Normand:
Calvados Apple sorbet
Main:
Black trumpet en papillote with toasted barley risotto, beet- cabernet truffle foam, and braised celery hearts
Dessert:
Raw Tiramisu: Layers of vanilla-espresso cake, chocolate mousse, whipped cream and topped with chocolate powder.
